As usual, I will let the main stalk of the cabbage plants to produce shoots from leaf axils afternoon the main 'head' harvested.
Look... We have three little 'new' cabbages from an old stalk.
The leaves usually have a bit sweet an crispy texture.
Even more if we pick the shoots earlier, young tender leaves mostly sweet and tasty.

Yum! I work at a garden where we harvest many vegetables, including cabbages. It's amazing how fast those side shoots grow big and full after harvesting the main heads. I guess the insects like the cabbages, too. ;-)
