FEEL BLUE - PART 5

This is my sons favorite drink.
But all of my family like it.
We call this drink... blue-purple syrup.
We  use kembang telang flowers, fresh or dry.
Really simple process.
We only need boiling water, kembang telang flowers, sugar or honey and lime or lemon juice.


To make three cups of this syrup we need :
  • 500 ml boiling water
  • 10-15 pcs fresh kembang telang flowers
  • 3 tb spoons sugar or honey
  • 1 pc lemon/lime, and take the juice 

First, wash the flowers and drain it.
Then put the flowers into the boiling water, and wait for about 5-10 minutes.
If we use dried flowers, you need about 30-50 pcs flowers. 
And we have to boil the water, and wait for about 30 minutes
The flowers will loose their pigment... anthocyanin.
The pigment will move into the water.

 

Then strain the water, and put it into the cups or glass.

We get the blue drink, but the process is still continued.
We  add sugar or honey on it, then stir well.



The final step is add the lemon or lime juice...
This is the most interesting process.
This process aims to add flavor.
But... it makes the color of the water is change.  
Lemon juice makes the pH of the water become lower.
Look the change...








Now... We get blue-purple syrup.
If you like cold drink, you can add ice cubes on it.

 
Next we will make my favorite snack from this flowers.
